Chicken Fillet Sandwich on Whole Grain Sandwich Thin

Ingredients

1 – 4 oz, boneless, skinless chicken breast fillet

cooking spray

1 whole grain sandwich thin (Arnold’s or Pepperidge Farms)

slice onion (optional)

slice of tomato

lettuce leaf

1 tbl Hellmann’s Reduced Fat Mayonnaise (optional)

½ tbl ketchup (optional)

1 tsp of mustard (optional)

Directions

Preheat a nonstick skillet. Spray with a short blast of cooking spray. Pan-grill chicken breast on both sides until lightly browned for 10 to fifteen minutes.

Prepare sauce: Combine mustard, ketchup and mayonnaise in a small container and mix well.

Lightly toast sandwich thin, and spread sauce or condiment of choice on one side of sandwich thin. Assemble sandwich.
