Chicken Piccata

Portion -  3 oz chicken cooked
Recipe Serves two

Ingredients

8 oz of ¼” flat boneless chicken breast fillets

½ cup of flour

1 tbl butter (halved)

1 tbl olive oil

2 tbls of fresh squeezed lemon juice

1 cup of chicken stock

2 tbls dry white wine

1 tbl parseley

salt to taste

ground black pepper to taste

Season chicken, then, dredge through flour.

Directions

Preheat medium stainless pan over medium heat. Add oil. Add 1/2 tbl of butter. When pan is sizzling, add chicken and brown on both sides (three to five minutes, each side). Remove chicken from pan.

Add ½ tbl of butter to pan. Once butter has melted, add lemon juice. Add wine and chicken stock. Simmer on low for five minutes. Add back chicken. Add parseley. Simmer for 3 minutes on each side. Remove from heat and serve.

Serving Suggestions

Serve with white rice. Add in additional calories
