Recipe serves three

Ingredients

7 cups of fresh water

9 oz. lean beef cubes

18 to 20 ounces of white potatoes, peeled and cut into 1” to 1 ½” inch cubes

9 baby carrots, halved

1 cup of soup vegetables

1 cup of petite diced tomatoes

¼ cup onion, diced or wedged

1 celery stalk, diced or wedged

1 cup of beef broth

Salt to taste

Ground black pepper to taste

Directions

Over medium heat, cook beef cubes in water for ½ hour. If necessary, remove meat to colander and rinse off residue. Rinse residue from pot. In the clean pot over medium heat, add seven cups of fresh water.

Add meat, salt, pepper tomatoes and beef broth.

Cook for 1 hour until the meat is tender. Add carrots, potatoes and celery and onions. Bring to a boil. Boil for 15 to 20 minutes. Add soup vegetables. Cook for an additional 15 to 20 minutes. Remove from heat.
