Breaded Veal Scallopine

Recipe serves two

Ingredients

8 oz of thin sliced veal leg for scallopine (pounded with meat mallet to tenderize)

1 cup Italian flavored bread crumbs

3 egg whites

Cooking Spray

Table salt to taste

Ground black pepper to taste

Directions

Preheat oven to 450 degrees. Spray an aluminum pan with a heavy coat of cooking spray. Place egg whites into a small container. Season veal with salt and pepper. Place veal slices in egg mixture and saturate thoroughly.

Dredge veal through bread crumbs. Cover thoroughly on both sides. Place veal slices in aluminum pan. Place in oven for five to seven minutes. Turn and bake for an additional five to seven minutes. Remove when both sides are browned.

Serving Suggestions

Serve with Fettuccine Alfredo. Add additional calories.
