German Potato Salad

Portion -  1 cup
Recipes serves 3 to 4, calories and nutrition data is for 3 servings

Ingredients

3 medium potatoes peeled and cut into small cubes (15.5 oz maximum)

1 slice of thick bacon

¼ cup of diced celery

¼ cup of diced onions (yellow or red)

½ tsp of fresh parsley chopped (optional)

2 tsp of cider vinegar

3 tbl of Hellmann’s Light Mayonnaise

Salt to taste

Ground black pepper to taste

Directions

Boil potatoes until you can easily pierce a potato cube all the way through without any force. Drain in a colander. Rinse with cold water.

Fry bacon slices and remove from pan. Set bacon aside and crush to make bacon bits. Saute onions and celery in bacon fat. Remove when translucent and drain in a strainer to remove excess fat.

Mix all ingredients in a medium bowl, adding mayonnaise last. Serve warm or chilled.
