Portion -  1/2 cup
Recipe serves two

Ingredients

4 oz, Perdue boneless, skinless, Tenderlions

blast of cooking spray

2 tbl Hellmann’s Low Fat (formerly Reduced Fat) Mayonnaise

¼ cup diced celery

½ hard boiled egg, diced

1 tbl shredded carrots (to taste)

2 tbl diced onions

½ tbl finely diced green pepper

Salt to taste

Ground black pepper to taste

Directions

Preheat a small non stick skillet or griddle. Spray with cooking spray. Season chicken with salt and pepper then grill on both sides until done, about ten to fifteen minutes total cooking time. Cut chicken into small cubes. Place in refrigerator to cool.

Mix all ingredients in a medium mixing bowl, adding mayonnaise last. Mix mayonnaise in thoroughly. Chill in refrigerator before serving.

Serving Suggestions

Serve on a bed of lettuce with tomato wedges.
