Portion -
3 oz lamb
Recipe serves four
Ingredients
12 oz boneless leg of lamb top, sliced or cubed (3 oz oer serving)
4 tbls of flour
2 tbls of olive oil
½ to 1 tsp of curry powder
1 medium onion, sliced
Table salt to taste
Ground black pepper to taste
¼ tsp of ginger powder
2 cups of hot water
Directions
Preheat large stainless skillet over medium heat. Add oil. Add lamb and season in pan. Brown the lamb on all sides. Remove from skillet. Add onions and brown. Sprinkle flour over onions and stir.
Start to add water slowly, alternately adding water while stirring in with the flour and onions. Add 1 cup of the water. Save the rest of the water to add if the gravy becomes too thick before the lamb is finished cooking. Then add a little at a time.
Add the curry, ginger, salt and pepper. Lower heat to a simmer and cover tightly. Simmer on low for 30 minutes. Add more water as needed. Remove from heat when done.
