Manhattan Clam Chowder

Portion -  2 cups
Recipe Serves four

Ingredients

4 small potatoes (about 5.25 oz each)

1 thick slice of bacon, diced into 1 inch pieces ( or 1 ½ slice regular bacon)

1 small onion, finely chopped

2 stalks of celery, diced small

1 bay leaf

1 cups of vegetable stock

2 cups of fresh water

1 small dash of crushed red pepper flakes

1 - 14.5 oz of petite diced tomatoes

2 – 8 oz bottles of clam juice

3 – 6.5 oz cans of chopped or diced clams, drained and 1 cup of reserve juice from clams

1 tbl of fresh chopped parseley

2 tbls of corn starch

Salt to taste

Ground black pepper to taste

pinch of dried thyme

Directions

Preheat a large stainless steel pot over medium heat. Heat vegetable stock and clam juice together. Place bacon slices in pot. Reduce heat and cook until crisp.

Remove crisp bacon from pan. After bacon is cooled, crush into bacon bits. Add onions and celery to bacon fat and sauté until soft. Sprinkle corn starch a ½ tbl at a time, over the onions and celery.

In between adding the corn starch add about three tbls of the clam juice and stock and mix well each time until all of the corn starch and juice is added.

Add bacon bits, thyme, bay leaf, parseley, crushed red peppers, salt, pepper and reserve clam juice and mix well. Add tomatoes and water. Stir. Bring pot to a simmer. Add potatoes and stir.

Simmer on medium for about 20 minutes, or until potatoes are tender and you can smash a sample potato with a fork with moderate force. Add clams and simmer for 3 minutes. Remove from heat.

Serving Suggestions

Serve with croutons. Add in extra calories.
